| My Meals for Meatless Monday! Breakfast: Egg Whites and Salsa Lunch: Spinach Salad with Beets, Goat Cheese, Red Onions Dinner: Spinach & Kale Ravioli |
Things I have learned in my few months of vegetarianism:
#1. It is still super easy to get your protein in without meat. Seeds! Beans/Lentils! Eggs! Greek Yogurt! Oh and my favorite About Time Protein Powder.
#2. Eating fast food just doesn't really work. YAY! I can't really just make a crappy choice and run through any drive-thru. I stick to veggie burrito bowls at Pancheros and veggie sandwiches from Jimmy Johns if I'm in a pinch. Not great, but better than the burger and fry routine.
#3. Leftovers for lunch are the best thing ever! I really was never a fan of next day meat, but next day veggies that have been seasoned and roasted just taste better! YAY Oh and that goes for tofu too.
Also, I have been on the Runner's World Holiday Run Streak since last Tuesday actually. :) As expected, my mileage isn't AMAZING, but it isn't about miles damnit... it is about commitment. Well, I'm committed. In fact, I'm going to head down to the treaddie after I post this and catch up with my favorite brothers.

How was your Thanksgiving?? Mine was great, I had an awesome morning run and ate reasonably. I did drink a bottle of wine over a 6 hour period, but some things just can't be helped. Honestly, I spent the rest of the weekend spooning my cats, doing laundry and watching Vampire Diaries. It was awesome and work this morning sure was a ruuuude awakening!
Do you let your diet/exercise routines slide over the holidays or are you making plans/ joining challenges to stay motivated? Elf 4 Health! Run Streak! Success is in the planning I say! Plus I didn't do a damn thing last winter and gained weight... I wonder why that happened!?!?

ReplyDeleteI joined the elf4health and flunked the meatless monday, but I don't believe in it so I didn't care. Great job with the run streak and I would be spooning cats after a bottle of wine too.

ReplyDeleteI've never done a run streak, but good for you in committing to it! It seems like a great way to stay in the habit of running daily in the winter. :)
